Equipment

  • Large skillet or pan
  • Wooden Spoon
  • Cheese grater
  • Whisk
  • Measuring Cup
  • Pasta pot

Ingredients

  • 1 cup heavy cream
  • 4 tablespoons butter unsalted
  • 3 cloves garlic minced
  • 1 and 1/2 cups Parmesan cheese freshly grated
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg optional
  • Fresh parsley for garnish

Instructions

  • Place your skillet on medium heat.
  • Add the butter and let it melt.
  • Don't let it brown or burn.
  • This takes about one minute.
  • Add minced garlic to melted butter.
  • Stir it for 30 seconds only.
  • You want it fragrant, not burnt.
  • Remove from heat if it cooks too fast.
  • Slowly add heavy cream to the pan.
  • Stir everything together gently.
  • Bring it to a gentle simmer.
  • Let it cook for 2 minutes.
  • Remove pan from heat first.
  • Gradually add Parmesan cheese while whisking.
  • The sauce will thicken beautifully.
  • Keep stirring until smooth and creamy.
  • Add salt, pepper, and nutmeg now.
  • Taste and adjust as needed.
  • The sauce should coat your spoon.

Notes

  • Use freshly grated Parmesan cheese always.
  • Pre-grated cheese doesn't melt as smoothly.
  • Fresh cheese makes it extra creamy.
  • Don't let your sauce boil rapidly.
  • Low heat prevents the sauce from separating.
  • Add pasta water if it gets thick.
  • Just a tablespoon thins it perfectly.
  • Serve the sauce immediately for best results.
  • It thickens as it cools down.
  • Add cooked chicken or shrimp for protein.
  • Fresh herbs brighten up the flavors nicely.
