Ingredients
  

  • 4 chicken thighs boneless and skinless
  • 2 carrots chopped into chunks
  • 1 onion diced
  • 2 garlic cloves minced
  • 400 g canned chopped tomatoes
  • 2 tablespoons tomato paste
  • 250 ml chicken stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Wash all your vegetables first.
  • Chop the carrots into big chunks.
  • Dice the onion into small pieces.
  • Mince the garlic finely.
  • Pat the chicken thighs dry with paper towels.
  • Season them with salt and pepper.
  • Heat olive oil in a pan.
  • Add the chicken thighs to the pan.
  • Cook for 3 minutes on each side.
  • This adds flavor to the meat.
  • Don't cook them all the way through.
  • Just make them golden brown.
  • Put the onion in the slow cooker first.
  • Add the carrots and garlic next.
  • Place the browned chicken on top.
  • Pour in the canned tomatoes.
  • Add the tomato paste and chicken stock.
  • Sprinkle the thyme and rosemary over everything.
  • Drop in the bay leaves.
  • Put the lid on your slow cooker.
  • Set it to low heat.
  • Let it cook for 6 to 7 hours.
  • Or cook on high for 3 to 4 hours.
  • Don't lift the lid while cooking.
  • This lets the steam escape.
  • Remove the bay leaves before serving.
  • Taste and add more salt if needed.
  • The chicken should be very tender now.
  • Serve hot with crusty bread or rice.
