Wash all your vegetables first.
Chop the carrots into big chunks.
Dice the onion into small pieces.
Mince the garlic finely.
Pat the chicken thighs dry with paper towels.
Season them with salt and pepper.
Heat olive oil in a pan.
Add the chicken thighs to the pan.
Cook for 3 minutes on each side.
This adds flavor to the meat.
Don't cook them all the way through.
Just make them golden brown.
Put the onion in the slow cooker first.
Add the carrots and garlic next.
Place the browned chicken on top.
Pour in the canned tomatoes.
Add the tomato paste and chicken stock.
Sprinkle the thyme and rosemary over everything.
Drop in the bay leaves.
Put the lid on your slow cooker.
Set it to low heat.
Let it cook for 6 to 7 hours.
Or cook on high for 3 to 4 hours.
Don't lift the lid while cooking.
This lets the steam escape.
Remove the bay leaves before serving.
Taste and add more salt if needed.
The chicken should be very tender now.
Serve hot with crusty bread or rice.
