Ingredients
  

  • 500 g chicken breast diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 400 g penne pasta
  • 1 liter water for boiling
  • 1 teaspoon salt
  • 3 garlic cloves minced
  • 200 g cherry tomatoes halved
  • 100 g black olives pitted
  • 1 red onion sliced
  • 200 g feta cheese crumbled
  • Fresh oregano 2 tablespoons
  • Lemon juice 2 tablespoons
  • 100 ml pasta water

Instructions
 

  • Fill a large pot with water.
  • Add salt to the water.
  • Bring it to a rolling boil.
  • Add penne pasta to the pot.
  • Cook for 10-12 minutes until tender.
  • Stir occasionally to prevent sticking.
  • Save one cup of pasta water.
  • Drain the pasta in a colander.
  • Set it aside for later use.
  • Cut chicken breast into small cubes.
  • Season with salt and pepper generously.
  • Heat olive oil in a pan.
  • Add the chicken pieces to the pan.
  • Cook for 6-8 minutes until golden.
  • Make sure the chicken is cooked through.
  • Remove chicken and set it aside.
  • Use the same pan for the sauce.
  • Add more oil if needed.
  • Sauté garlic until it smells good.
  • Add sliced red onion next.
  • Cook for 2 minutes until soft.
  • Add cherry tomatoes to the pan.
