Ingredients
  

  • 6 large white onions peeled and sliced.
  • 2 medium red onions peeled and sliced.
  • 3 cloves of garlic sliced thin.
  • 50 grams of unsalted butter.
  • 2 liters of high-quality beef stock.
  • 8 slices of crusty French bread.
  • 200 grams of Cheddar or Gruyère cheese.
  • Fresh thyme leaves one small bunch.
  • Salt and black pepper to taste.
  • Olive oil for cooking.

Instructions
 

Sauté the Onions

  • Place the pot on medium heat. Add butter, oil, and all the sliced onions.

Add Herbs and Garlic

  • Stir in the garlic and fresh thyme leaves. This adds a deep, earthy flavor.

Cook Until Golden

  • Cook onions for 30 minutes. Keep stirring so they do not burn.

Pour in the Stock

  • Add the beef stock to the golden onions. Bring the liquid to a gentle boil.

Simmer the Soup

  • Lower the heat and simmer for 20 minutes. Season with salt and pepper.

Prepare the Toasts

  • Toast the bread slices until they are crunchy. Grate the cheese over each slice.

Melt the Cheese
