Wash all your vegetables thoroughly.
Peel and slice the carrots thinly.
Chop the celery into small pieces.
Dice the onion finely.
Mince the garlic cloves.
Keep everything ready on your cutting board.
Heat olive oil in your pot.
Add chicken breasts to the pot.
Season with salt and pepper.
Cook for 3 minutes on each side.
The chicken should turn golden brown.
Remove chicken and set it aside.
Add onion to the same pot.
Cook until soft and translucent.
This takes about 3 minutes.
Add garlic and cook for 1 minute.
Add carrots and celery next.
Stir everything together well.
Pour chicken stock into the pot.
Add bay leaf and fresh thyme.
Bring everything to a boil.
Return the chicken to the pot.
Reduce heat and simmer gently.
Cook for 20 minutes covered.
Remove chicken from the pot carefully.
Let it cool for 2 minutes.
Shred the chicken with two forks.
Return shredded chicken to the soup.
This makes it easier to eat.
Add egg noodles to the soup.
Stir them in gently.
Cook for 6-8 minutes.
The noodles should be tender.
Taste and adjust seasoning.
Add more salt if needed.
Remove bay leaf and thyme sprigs.
Ladle soup into warm bowls.
Garnish with fresh parsley.
Serve hot and enjoy immediately.
