Season chicken breasts with salt and pepper.
Heat olive oil in your pan.
Cook chicken for 5 minutes each side.
Remove and set aside on a plate.
Add butter to the same pan.
Toss in sliced mushrooms and cook them.
Stir for about 5 minutes until golden.
Add minced garlic and chopped onion.
Cook for 2 more minutes.
Pour white wine into the pan carefully.
Let it simmer for 3 minutes.
This reduces the wine and concentrates flavor.
Scrape any brown bits from the pan.
Pour in the heavy cream slowly.
Add fresh thyme to the sauce.
Stir everything together and let it bubble.
Season with more salt and pepper.
Return chicken to the pan gently.
Spoon sauce over the chicken pieces.
Simmer for 10 minutes until cooked through.
Garnish with fresh parsley before serving.
