Season chicken thighs with salt and pepper.
Heat olive oil in your large pan.
Add chicken skin-side down first.
Cook for 5 minutes until golden.
Flip and cook another 5 minutes.
Remove chicken and set aside.
Add onions to the same pan.
Cook for 3 minutes until soft.
Add sliced peppers and stir well.
Cook for 5 minutes until slightly softened.
Add minced garlic and cook 1 minute.
Pour in chopped tomatoes and chicken stock.
Add smoked paprika and dried oregano.
Stir everything together really well.
Season with salt and pepper.
Return chicken to the pan skin-side up.
Nestle it into the sauce nicely.
Bring everything to a gentle simmer.
Cover with lid and reduce heat.
Cook for 30 minutes until chicken is done.
Check chicken is cooked through completely.
The sauce should be thick and rich.
Garnish with fresh chopped parsley.
Serve hot with crusty bread or rice.
