Ingredients
  

  • 8 chicken thighs bone-in and skin-on
  • 3 bell peppers red, yellow, orange, sliced
  • 1 large onion finely chopped
  • 4 garlic cloves minced
  • 400 g tinned chopped tomatoes
  • 150 ml chicken stock
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Season chicken thighs with salt and pepper.
  • Heat olive oil in your large pan.
  • Add chicken skin-side down first.
  • Cook for 5 minutes until golden.
  • Flip and cook another 5 minutes.
  • Remove chicken and set aside.
  • Add onions to the same pan.
  • Cook for 3 minutes until soft.
  • Add sliced peppers and stir well.
  • Cook for 5 minutes until slightly softened.
  • Add minced garlic and cook 1 minute.
  • Pour in chopped tomatoes and chicken stock.
  • Add smoked paprika and dried oregano.
  • Stir everything together really well.
  • Season with salt and pepper.
  • Return chicken to the pan skin-side up.
  • Nestle it into the sauce nicely.
  • Bring everything to a gentle simmer.
  • Cover with lid and reduce heat.
  • Cook for 30 minutes until chicken is done.
  • Check chicken is cooked through completely.
  • The sauce should be thick and rich.
  • Garnish with fresh chopped parsley.
  • Serve hot with crusty bread or rice.
