Set your oven to 200°C or 400°F.

Peel and cube the sweet potatoes.
Make pieces about 2 inches big.
Put them in your mixing bowl.
They should be roughly equal sizes.
Add olive oil to the bowl.
Sprinkle paprika, garlic powder, and thyme.
Add salt and pepper generously.
Toss everything together until coated well.
Spread sweet potatoes on the tray.
Add the red onion wedges too.
Place chicken breasts on top evenly.
Make sure nothing overlaps too much.
Put the tray in the oven.
Bake for 35 to 40 minutes.
Check that chicken reaches 75°C internally.
Sweet potatoes should be fork-tender.
Remove from oven carefully using mitts.
Let everything rest for 5 minutes.
Garnish with fresh chopped parsley.
