of boneless chicken thighs

of unsweetened pineapple juice for the base.

of soy sauce for a salty and dark color.

of light brown sugar
packed very tight.

of ketchup for a thick red texture.

of fresh ginger
grated small.

Instructions
Make the Tropical Marinade
In a medium bowl, whisk the juice, soy, and sugar. Add the ketchup, ginger, and garlic and stir well.
Soak the Chicken Thighs
Place the chicken into a large bag and pour half the sauce. Save the rest of the liquid in a bowl today.
Chill in the Fridge
Let the chicken sit for at least four hours in the cold. This helps the meat get very tender and sweet.
Simmer the Basting Sauce
Pour the saved half of the sauce into a small pot. Boil it for five minutes until it is very thick.
Heat the Hot Grill
Light your grill until the coals are grey and very hot. Clean the grates well so the chicken does not stick.
Sear the Sweet Meat
Place the chicken on the grill with the skin side down. Cook for five minutes until you see dark grill marks.
Flip and Baste Well
Turn the chicken over and brush on the thick glaze. Flip the meat every few minutes and add more sauce.
Rest and Serve Hot
Cook until the inside is 165 degrees and very juicy. Let the meat rest for five minutes before you slice it.

Use chicken thighs because they stay moist on the grill.
Do not skip the pineapple juice for the best flavor today.
Flip the chicken often to avoid burning the sweet sugar.
Use fresh ginger instead of the dry powder version.
Let the meat reach room temperature before you start cooking.
