Ingredients
  

  • 1 cup wild rice rinsed
  • 1 lb boneless chicken thighs diced
  • 2 carrots chopped
  • 2 celery stalks diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 bay leaves

Instructions
 

  • Heat olive oil in large pot over medium heat.
  • Add diced chicken pieces to heated oil carefully.
  • Cook chicken until golden brown on all sides.
  • Remove chicken and set aside on plate.
  • Add onions, carrots, celery to same pot.
  • Sauté vegetables until softened, about five minutes.
  • Add minced garlic and cook one minute more.
  • Pour in chicken broth and add bay leaves.
  • Add wild rice and bring mixture to boil.
  • Return chicken to pot with accumulated juices.
  • Reduce heat and simmer forty-five minutes covered.
  • Stir in heavy cream and thyme gently.
  • Season with salt and pepper to taste.
  • Remove bay leaves before serving hot immediately.

Notes

  1. Rinse wild rice thoroughly to remove excess starch.
  2. Use chicken thighs instead of breasts for flavor.
  3. Don't boil after adding cream to prevent curdling.
  4. Add cream at the very end only.
