Ingredients

  • 1 cup butter softened
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • 1 cup chopped walnuts or pecans
  • 1 ½ cups mixed dried fruits raisins, cherries, apricots
  • ¼ cup orange juice
  • 1 teaspoon vanilla extract

Instructions

Prepare the pan

  • Grease your cake pan and line it with parchment paper. This helps the cake come out easily after baking.

Mix the butter and sugar

  • In a large bowl, beat the butter and brown sugar. Mix until soft and creamy. This step adds lightness to your cake.

Add the eggs

  • Add the eggs one by one. Mix well after each egg. This helps create a smooth batter.

Add dry ingredients

  • Sift together flour, baking powder, salt, cinnamon, and nutmeg. Slowly add them to the wet mix. Stir gently until blended.

Add fruits and nuts

  • Add your dried fruits and nuts. Pour in orange juice and vanilla. Mix everything gently so the fruits are spread evenly.

Bake the cake

  • Pour the batter into your pan. Bake in a preheated oven at 325°F (160°C) for about 1 hour 15 minutes. Check with a toothpick. If it comes out clean, it’s done.

Cool and serve

  • Let the cake cool in the pan for 10 minutes. Then move it to a cooling rack. Once cool, slice and enjoy your homemade Grandma Fruit Cake.

Notes

  • Soak fruits overnight for more flavor.
  • Use room-temperature butter and eggs.
  • Don’t overmix the batter.
  • Store in an airtight box to keep it moist.
  • Add a spoon of honey for extra sweetness.
