Ingredients
  

  • 1½ cups chocolate graham crackers crushed
  • ¼ cup melted butter
  • 2 tablespoons sugar
  • 24 oz cream cheese softened
  • ¾ cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 2 cups fresh blueberries
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat oven to 325°F.
  • Mix crushed crackers, butter, and sugar.
  • Press mixture into springform pan bottom.
  • Beat cream cheese until smooth and fluffy.
  • Add sugar gradually while mixing continuously.
  • Beat in eggs one at a time.
  • Mix in vanilla and sour cream.
  • Pour filling over prepared crust evenly.
  • Bake for 45-50 minutes until center sets.
  • Cool completely before removing from pan.
  • Cook blueberries, sugar, and cornstarch together.
  • Stir until mixture thickens into dark sauce.
  • Add lemon juice and cool completely.
  • Spread blueberry topping over cooled cheesecake.
  • Refrigerate for at least 4 hours.

  1. Use room temperature cream cheese for smooth mixing
  2. Don't overmix to prevent cracks in cheesecake
