Ingredients
  

  • 2 tbsp Olive Oil
  • 1 small Onion
  • 2 cloves Garlic
  • 1 pinch Red Chili
  • 1 can Crushed Tomatoes
  • 1 tbsp Tomato Purée
  • 1 tsp Dried Oregano
  • 1 bunch Fresh Basil
  • 1 pinch Brussel Sprouts Optional garnish
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Sugar
  • 400 g Spaghetti

Instructions
 

1. Prep the Vegetables

  • Peel your onion and garlic first. Chop the onion into very small pieces. Mince the garlic cloves very finely. Slice the red chili if you want spice. Keep everything ready on a clean board.

2. Sauté the Base

  • Put your pan on medium heat. Add a splash of olive oil. Throw in the onions and chili. Cook them until they are soft. This takes about five minutes. Add the garlic for the last minute. Do not let the garlic burn.

3. Add the Tomatoes

  • Pour in the canned tomatoes now. Stir them into the cooked onions. Add the tomato purée to the pan. Mix it well until it looks smooth. Turn the heat down to a simmer.

4. Season the Sauce

  • Sprinkle in the dried oregano. Add a pinch of salt and pepper. Add a tiny bit of sugar now. This stops the sauce from being sour. Let it bubble gently for ten minutes.

5. Boil the Pasta

  • Fill your large pot with water. Add a lot of salt to it. Bring the water to a rolling boil. Drop in your favorite spaghetti noodles. Cook them until they are firm. This is called al dente.

6. Combine and Finish

  • Drain the pasta but save some water. Toss the pasta into the sauce pan. Tear the fresh basil leaves by hand. Mix everything together very well. Add a splash of pasta water if dry.
