Pat the scallops very dry with paper towels. Remove the small side muscle from each one. This ensures they cook evenly and feel soft.
Season one side of the scallops with salt. Do not use pepper yet because it might burn. Only season them right before you start cooking.
Heat your large skillet over a high heat. Add a swirl of olive oil to the pan. Wait until the oil is lightly smoking.
Place scallops in the pan in a circle. Start at the top like a clock face. This helps you remember which one to flip first.
Press them down gently with your fingers or tongs. Let them sear for about two minutes. Do not move them while they are browning.
Flip the scallops over once they are golden. They should look like a toasted marshmallow. Now, add the butter, garlic, and thyme.
Tilt the pan so the butter pools at the bottom. Use a spoon to pour butter over the scallops. This is called basting and adds huge flavor.
Squeeze fresh lemon juice over the top now. Remove the pan from the heat immediately. The scallops are ready to be served hot.
