Ingredients

of long-grain white rice
rinsed very well.
8
ounces
of spicy chorizo or Italian sausage
sliced.
1
large red onion
diced into small pieces today.
2
cloves
of garlic
minced into a fine paste.

red bell pepper
seeded and chopped now.
1
teaspoon
of smoked paprika for the deep color.
4
cups
of chicken stock for the savory liquid.
1/2
cup
of dry white wine to deglaze the pan.

tablespoons
of olive oil for the high heat.

of fresh flat-leaf parsley
chopped fine.
1/2
teaspoon
of kosher salt to season the rice.

teaspoon
of black pepper for a tiny kick.

Instructions
Brown the Spicy Sausage
Heat the oil in your large skillet over medium-high heat. Add the sausage slices and fry until they are very brown today.
Sauté the Fresh Vegetables
Add the onion, garlic, and bell pepper to the sausage fat. Cook for five minutes until the vegetables are very soft now.
Toast the White Rice
Stir the dry rice into the pan. Let the grains toast for two minutes until they smell very nutty and fragrant today.
Deglaze with White Wine
Pour the wine into the hot pan. Use your spoon to scrape all the savory brown bits off the bottom of the pan now.
Add the Seasoned Stock
Stir in the chicken stock, smoked paprika, salt, and pepper. Add the saffron threads for a very bright yellow color today.
Simmer and Cover Tight
Bring the liquid to a boil and then turn the heat down very low. Cover the pan with a tight lid for fifteen minutes now.
Steam Without Stirring

Notes
