Ingredients
  

  • 2 cups of long-grain white rice rinsed very well.
  • 8 ounces of spicy chorizo or Italian sausage sliced.
  • 1 large red onion diced into small pieces today.
  • 2 cloves of garlic minced into a fine paste.
  • 1 red bell pepper seeded and chopped now.
  • 1 teaspoon of smoked paprika for the deep color.
  • 4 cups of chicken stock for the savory liquid.
  • 1/2 cup of dry white wine to deglaze the pan.
  • 2 tablespoons of olive oil for the high heat.
  • 1/4 cup of fresh flat-leaf parsley chopped fine.
  • 1/2 teaspoon of kosher salt to season the rice.
  • 1/4 teaspoon of black pepper for a tiny kick.
  • A pinch of saffron threads for a floral smell today.

Instructions
 

Brown the Spicy Sausage

  • Heat the oil in your large skillet over medium-high heat. Add the sausage slices and fry until they are very brown today.

Sauté the Fresh Vegetables

  • Add the onion, garlic, and bell pepper to the sausage fat. Cook for five minutes until the vegetables are very soft now.

Toast the White Rice

  • Stir the dry rice into the pan. Let the grains toast for two minutes until they smell very nutty and fragrant today.

Deglaze with White Wine

  • Pour the wine into the hot pan. Use your spoon to scrape all the savory brown bits off the bottom of the pan now.

Add the Seasoned Stock

  • Stir in the chicken stock, smoked paprika, salt, and pepper. Add the saffron threads for a very bright yellow color today.

Simmer and Cover Tight

  • Bring the liquid to a boil and then turn the heat down very low. Cover the pan with a tight lid for fifteen minutes now.
