Ingredients
2
thick slices of marble rye bread for the base.
6
ounces
of thinly sliced corned beef or pastrami.
2
slices
of Swiss cheese for a nutty melt.
1/2
cup
of sauerkraut
drained very well today.
2
tablespoons
of unsalted butter
softened.
1
tablespoon
of mayonnaise for the dressing.
1
teaspoon
of ketchup for a tiny bit of sweet.
1
teaspoon
of prepared horseradish for the kick.
1/2
teaspoon
of Worcestershire sauce for salt.
A tiny pinch of smoked paprika for the color today.
1
large dill pickle for a crunchy side now.
Instructions
Mix the Zesty Dressing
In a small bowl, combine the mayo, ketchup, horseradish, and Worcestershire. Stir until the pink sauce is very smooth today.
Butter the Rye Bread
Spread the soft butter on one side of every bread slice. This side will touch the hot pan for a very golden crust now.
Layer the Savory Cheese
Place the bread butter-side down on your board. Place one slice of Swiss cheese on the dry side of the bread today.
Pile the Corned Beef
Add a thick layer of corned beef on top of the cheese. Make sure the meat is spread evenly so the sandwich is flat now.
Add the Tangy Sauerkraut
Squeeze the extra water out of the sauerkraut and pile it onto the meat. This adds a very sharp and juicy crunch today.
Top with More Cheese
Place the second slice of Swiss cheese and the remaining bread slice on top. The buttered side must be facing up now.
Grill Until Very Golden
Place the sandwich in a medium-hot skillet. Cook for four minutes on every side until the cheese is very melty today.
Slice and Serve Hot
Use your serrated knife to cut the sandwich on a diagonal. Serve with a cold dill pickle while the bread is very crunchy now.
Notes
Always drain the sauerkraut well so the bread does not get soggy today.
Use a heavy pan to press the sandwich down for a much better melt.
Cook over medium heat so the cheese melts before the bread burns now.
Use pastrami if you love a much more smoky and peppery flavor today.
Add a splash of hot sauce to the dressing for a very spicy kick.
Use a high-quality marble rye for a much more beautiful look.
Serve with a side of potato chips for a classic deli experience today.
