- 1 cup RED WINE
- 2 cups BEEF STOCK
- 2 large SHALLOTS
- 2 cloves GARLIC
- 3 sprigs FRESH THYME
- 1 tsp PEPPERCORNS
- 2 tbsp UNSALTED BUTTER
- 1 pinch SUGAR
- 1/2 tsp SALT
Peel and slice your shallots very thinly. Crush the garlic cloves with the side of your knife. Place them into your dry saucepan over medium heat.
Add the peppercorns and the fresh thyme sprigs. Stir them for two minutes until they smell very good. Do not let the shallots turn dark brown.
Pour the red wine into the hot saucepan now. Turn the heat up to high to start boiling. Let the wine bubble until it reduces by half.
Add the beef stock to the reduced wine mixture. Bring it back to a boil very quickly. Let it simmer until the liquid is thick and syrupy.
Pour the sauce through a fine mesh sieve. Discard the shallots, garlic, herbs, and the peppercorns. Return the clean liquid back to the warm pan.
Whisk in the cold butter one piece at a time. The sauce will become shiny and very rich. Serve it immediately over your favorite roasted meat.
