Ingredients
  

  • 1 cup RED WINE
  • 2 cups BEEF STOCK
  • 2 large SHALLOTS
  • 2 cloves GARLIC
  • 3 sprigs FRESH THYME
  • 1 tsp PEPPERCORNS
  • 2 tbsp UNSALTED BUTTER
  • 1 pinch SUGAR
  • 1/2 tsp SALT

Instructions
 

  • Peel and slice your shallots very thinly. Crush the garlic cloves with the side of your knife. Place them into your dry saucepan over medium heat.
  • Add the peppercorns and the fresh thyme sprigs. Stir them for two minutes until they smell very good. Do not let the shallots turn dark brown.
  • Pour the red wine into the hot saucepan now. Turn the heat up to high to start boiling. Let the wine bubble until it reduces by half.
  • Add the beef stock to the reduced wine mixture. Bring it back to a boil very quickly. Let it simmer until the liquid is thick and syrupy.
  • Pour the sauce through a fine mesh sieve. Discard the shallots, garlic, herbs, and the peppercorns. Return the clean liquid back to the warm pan.
  • Whisk in the cold butter one piece at a time. The sauce will become shiny and very rich. Serve it immediately over your favorite roasted meat.

Notes

  • Use a wine that tastes good to you.
  • Reduce the liquid slowly to keep the flavor clean.
  • Cold butter makes the sauce shine much better.
  • Do not boil the sauce after adding the butter.
  • Strain the sauce twice for a very smooth look.
  • Use a wide pan to speed up the reduction.
  • Season with salt only at the very end.
  • Keep the heat at a steady simmer, not high.
