Ingredients
  

  • 2 lbs Pumpkin
  • 1 tbsp Olive Oil
  • 1 medium Yellow Onion
  • 2 cloves Fresh Garlic
  • 4 cups Vegetable Stock
  • 1/2 cup Heavy Cream
  • 2 tbsp Butter
  • 1/4 tsp Nutmeg
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions
 

1. Roast the Pumpkin:

  • Cut the pumpkin into small cubes. Toss them in oil and salt. Roast in the oven until very soft.

2. Sauté the Aromatics:

  • Heat oil in your big pot. Add the chopped onions and garlic. Cook until they are soft and clear.

3. Combine and Simmer:

  • Add the roasted pumpkin to the pot. Pour in the vegetable stock. Let it simmer for ten minutes.

4. Blend Until Smooth:

  • Use your blender in the pot. Mix until there are no lumps left. It should look very creamy.

5. Add Finishing Touches:

  • Stir in the heavy cream and butter. Add the nutmeg, salt, and pepper. Let it warm through gently.
