Ingredients
1
cup
of old-fashioned rolled oats for the heart.
1
cup
of unsweetened almond milk for the soak.
1/2
cup
of plain Greek yogurt for the creaminess.
1
tablespoon
of chia seeds for a thick texture.
1
tablespoon
of Manuka honey or maple syrup.
1/2
teaspoon
of pure vanilla extract for the smell.
1/4
teaspoon
of ground cinnamon for a warm kick.
1/2
cup
of fresh blueberries or sliced strawberries.
1/4
cup
of toasted flaked almonds for a crunch today.
A tiny pinch of sea salt to balance the sweet.
1/2
teaspoon
of fresh lemon zest for a bright finish.
Instructions
Mix the Dry Base
In a medium bowl, combine the rolled oats, chia seeds, and cinnamon. Stir the white and brown grains together now.
Add the Creamy Liquids
Pour in the almond milk, Greek yogurt, and vanilla extract. Use your large spoon to mix until the oats are very wet today.
Sweeten with Honey
Stir in the honey and the tiny pinch of salt. This adds a deep floral sweetness to the chilled base now.
Fold in the Citrus Zest
Gently stir the fresh lemon zest into the mixture. This is the "chef's secret" for a very bright and fresh taste today.
Transfer to a Mason Jar
Spoon the mixture into a clean glass jar. Make sure there is enough room at the top for the fresh fruit later.
Soak Over Night
Tighten the lid and place the jar in the fridge. Let the oats sit for at least eight hours to get very soft and thick.
Toast the Flaked Almonds
In a small skillet, toast the almonds over a medium heat. Do this for three minutes until they are very golden and fragrant today.
Layer and Serve Cold
Open the jar and top with the fresh berries and toasted nuts. Serve the oats while they are very cold and creamy today.
Notes
Use old-fashioned oats instead of quick oats for a much better chew today.
Always toast the nuts right before serving to keep them very crunchy.
Add a splash of extra milk in the morning if the oats are too thick now.
Use a high-quality honey for a much more complex and floral flavor.
Squeeze a little lemon juice over the fruit to keep the colors very bright.
Shake the jar halfway through the soak to keep the chia seeds spread out.
Use a glass jar so you can see the beautiful layers of fruit and cream.v
