Ingredients
  

  • 4 cups Dashi Stock
  • 3 tbsp Miso Paste
  • 1 cup Brussel Sprouts thinly sliced
  • 1/2 cup Silken Tofu cubed
  • 2 tbsp Dried Wakame
  • 2 stalks Green Onions
  • 1 tsp Ginger grated
  • 1 tsp Soy Sauce

Instructions
 

  • Prepare the Dashi Base Pour the dashi stock into your large pot. Heat it until it starts to simmer gently. Do not let it boil too hard.
  • Soak the Seaweed Place the dried wakame in a small bowl of water. Let it sit for five minutes to soften up. Drain it well.
  • Mix the Miso Paste Take a ladle of warm stock into a small bowl. Add the miso paste and whisk until smooth. This prevents clumps.
  • Add the Vegetables Add the thinly sliced Brussel Sprouts and ginger to the pot. Let them simmer for three minutes until tender.
  • Incorporate the Tofu Carefully drop the small tofu cubes into the pot. Be gentle so the tofu does not break apart.
  • Combine and Finish Turn off the heat before adding the miso mixture. Stir it in slowly. Add the wakame and green onions now.
