Ingredients
  

  • 1/2 cup UNSALTED BUTTER
  • 2 tbsp FRESH LEMON JUICE
  • 1 tbsp HEAVY CREAM
  • 1 small SHALLOT
  • 1/4 tsp SALT
  • 1/4 tsp BLACK PEPPER
  • 1 tsp FRESH PARSLEY

Instructions
 

  • Peel and mince your shallots very finely. Place them into the small saucepan. Add a tablespoon of butter to the pan.
  • Turn the stove to medium-low heat. Sauté the shallots until they are soft. Do not let them turn brown.
  • Squeeze the fresh lemon juice into the pan. Let the liquid simmer for two minutes. This reduces the sharp acid slightly.
  • Whisk in the heavy cream right now. Let it bubble for just one minute. This creates a thick and stable base.
  • Cut the remaining cold butter into small cubes. Add one cube at a time. Whisk constantly until the butter melts completely.
  • Remove the pan from the heat immediately. Season the sauce with salt and pepper. Stir in the chopped parsley for freshness.
