Ingredients
  

  • 1 lb GROUND TURKEY
  • 12 oz PASTA Penne or Fusilli
  • 2 tbsp OLIVE OIL
  • 1 medium ONION
  • 3 cloves GARLIC
  • 2 tbsp TOMATO PASTE
  • 1 cup CHICKEN STOCK
  • 1 tsp DRIED OREGANO
  • 1/2 tsp RED PEPPER FLAKES
  • 1/2 cup PARMESAN CHEESE
  • To taste SALT AND PEPPER

Instructions
 

  • Fill your large pot with plenty of cold water. Add a big pinch of salt to the water now. Place the pot on the stove over high heat.
  • Wait for the water to reach a rolling boil. Add your dry pasta shapes to the boiling water. Cook them until they are firm but tender to eat.
  • Heat the olive oil in your large skillet now. Add the finely chopped onion to the hot oil. Sauté the onion until it looks soft and clear.
  • Add the ground turkey to the hot skillet now. Use your spoon to break the meat into small pieces. Brown the turkey until no pink color remains visible.
  • Stir in the minced garlic and the tomato paste. Cook these for two minutes to release the deep flavors. The mixture should smell very fragrant and look dark.
  • Pour the chicken stock into the skillet very slowly. Add the oregano, salt, pepper, and red pepper flakes. Let the sauce simmer and thicken for ten minutes.
  • Drain the pasta but save a little pasta water. Toss the cooked pasta into the turkey sauce skillet. Mix everything well so the pasta is fully coated.
  • Add a splash of pasta water if it looks dry. Sprinkle the fresh parmesan cheese over the top now. Serve the pasta while it is still steaming hot.

Notes

  • Salt your pasta water like the salty sea.
  • Do not overcook the pasta or it gets mushy.
  • Brown the turkey well for the best deep flavor.
  • Use fresh garlic instead of the jarred kind.
  • Add pasta water to make the sauce very silky.
  • Taste your sauce before you add the cooked pasta.
  • Chop onions very small for a better sauce texture.
  • Use a wide skillet to brown the meat faster.
