Ingredients
  

  • 400 g WHITE FISH FILLETS Cod or Pollock
  • 250 g SMOKED HADDOCK
  • 200 g SALMON
  • 150 g KING PRAWNS
  • 800 g POTATOES
  • 3 large EGGS
  • 100 g FROZEN PEAS
  • 4 SPRING ONIONS
  • 250 ml HEAVY CREAM
  • 100 g CHEDDAR CHEESE
  • 50 g FROZEN BUTTER
  • 1 tsp SALT
  • 1 tsp BLACK PEPPER

Instructions
 

  • Place your eggs in the large pot carefully. Do not let them drop or crack. Cover them with two inches of cold water.
  • Turn the stove to high heat now. Bring the water to a rolling boil. This will start the cooking process quickly.
  • Peel and chop your potatoes into even chunks. Place them in a separate pot of salted water. Boil them until they are very soft.
  • Drain the potatoes well after they finish boiling. Mash them until they are completely smooth. Let them cool down for a few minutes.
  • Dice all your fresh fish into bite-sized pieces. Place the fish and prawns into your baking dish. Spread them out in an even layer.
  • Season the fish with salt and black pepper. Scatter the frozen peas and sliced spring onions over. Pour the heavy cream over everything evenly.
  • Peel the boiled eggs and cut into quarters. Nestled the egg pieces among the raw fish. This adds great texture to the filling.
  • Grate the frozen butter into the mashed potatoes. Add half of your grated cheddar cheese too. Mix them together gently but do not overwork.
  • Spread the potato mixture over the fish layer. Use a fork to create rough peaks. These peaks will get very crunchy in the oven.
  • Sprinkle the rest of the cheese on top. Bake at 200°C for about 25 to 30 minutes. The top should be golden and bubbling.

Notes

  • Use very cold butter for a much crispier potato crust.
  • Do not overcook the fish before putting it in the oven.
  • Season every layer of the pie for the best flavor.
  • Let the pie sit for five minutes before you serve.
