Ingredients
  

  • 8 pieces chicken thighs
  • 4 slices smoked bacon
  • 2 cups red wine
  • 1 cup chicken stock
  • 1 cup Brussel Sprouts
  • 200 g button mushrooms
  • 10 pearl onions
  • 2 large carrots
  • 3 cloves garlic
  • 1 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 4 sprigs fresh thyme
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 

1. Brown the Bacon

  • Start by frying the bacon in the pot. Cook until it is very crispy and gold. Remove the bacon but keep the fat. This fat adds a lot of flavor later.

2. Sear the Chicken

  • Season your chicken with salt and pepper. Dust the pieces lightly with some flour. Fry them in the bacon fat until brown. Do not cook them all the way yet.

3. Sauté the Vegetables

  • Put the onions and carrots in the pot. Add the mushrooms and Brussel Sprouts now. Cook them until they start to soften. Add the garlic and stir for one minute.

4. Deglaze with Wine

  • Pour the red wine into the hot pot. Scrape the bottom to get the brown bits. This is where the big flavor lives. Let the wine bubble for five minutes.

5. Add Liquid and Simmer

  • Add the chicken stock and tomato paste. Put the chicken and bacon back inside. Add the fresh thyme on top of everything. Cover the pot with a tight lid.

6. Slow Cook to Perfection

  • Turn the heat down to very low. Let it simmer for about one hour. The chicken should be falling off the bone. The sauce will be dark and thick.
