- 2 large CHICKEN BREASTS
- 1/2 cup ALL-PURPOSE FLOUR
- 2 large EGGS
- 1 cup PANKO BREADCRUMBS
- 1/2 cup PARMESAN CHEESE
- 1 cup MOZZARELLA CHEESE
- 1.5 cups MARINARA SAUCE
- 1/4 cup OLIVE OIL
- 5 leaves FRESH BASIL
- 1 tsp SALT
- 1 tsp BLACK PEPPER
Place your chicken on a flat cutting board. Cover it with plastic wrap to avoid a mess. Pound it thin with a heavy meat mallet.
Set up three bowls for the breading process. Put flour in the first bowl. Add beaten eggs to the second bowl.
Mix breadcrumbs and parmesan in the third bowl. Season all three bowls with salt and pepper. This builds flavor in every single layer.
