Ingredients
  

  • 4 Large CHICKEN THIGHS
  • 200 g MUSHROOMS
  • 2 Medium SHALLOTS
  • 3 Cloves GARLIC
  • 150 ml WHITE WINE
  • 250 ml CHICKEN STOCK
  • 100 ml HEAVY CREAM
  • 2 tbsp BUTTER
  • 1 tbsp OLIVE OIL
  • 3 Sprigs FRESH THYME
  • 1 tsp SALT
  • 1 tsp BLACK PEPPER

Instructions
 

  • Season your chicken thighs with plenty of salt and pepper. Make sure to coat both sides of the meat well.
  • Heat oil in your large skillet over medium-high heat. Place the chicken skin-side down in the hot pan.
  • Sear the chicken until the skin is golden and crispy. This should take about five to seven minutes total.
  • Remove the chicken from the pan and set aside. Keep the fat in the pan for the next step.
  • Add the sliced mushrooms and shallots to the same skillet. Sauté them until they are soft and lightly browned.
  • Stir in the minced garlic and fresh thyme sprigs. Cook for one minute until you smell the garlic.
  • Pour the dry white wine into the hot skillet. Scrape the bottom of the pan to release the flavor.
  • Let the wine reduce by half over medium heat. This removes the harsh alcohol taste from the sauce.
  • Pour in the chicken stock and bring to a simmer. Add the chicken thighs back into the pan carefully.
  • Cover the pan and cook for fifteen more minutes. Ensure the chicken is cooked all the way through.
  • Stir in the heavy cream and a knob of butter. Let the sauce thicken for two minutes without a lid.

Notes

  • Always pat the chicken dry before you start searing.
  • Do not crowd the pan while browning the meat.
  • Use cold butter at the end for a glossy finish.
  • Keep the heat low once you add the heavy cream.
  • Fresh herbs always taste better than dried ones here.
  • Let the chicken rest for five minutes before serving.
