Ingredients
  

  • 8 Chicken Thighs
  • 100 g Smoked Bacon
  • 2 Large Onions
  • 3 Carrots
  • 2 Celery Stalks
  • 2 Garlic Cloves
  • 500 ml Chicken Stock
  • 1 tbsp Flour
  • 3 Sprigs Fresh Thyme
  • 2 Bay Leaves
  • 2 tbsp Olive Oil
  • 1 cup Brussel Sprouts optional side
  • Salt and Pepper to taste

Instructions
 

1. Brown the Chicken

  • Heat the oil in your large casserole pot. Season your chicken well with salt and black pepper. Place the chicken skin-side down in the hot oil. Cook until the skin is very crispy and golden brown. Remove the chicken and set it aside on a plate.

2. Sauté the Vegetables

  • Add the chopped bacon to the same hot pot. Fry the bacon until it becomes very crispy. Toss in the onions, carrots, and the celery sticks. Cook them until they start to soften and turn brown. Add the garlic and cook for one more minute.

3. Add Flour and Herbs

  • Sprinkle the flour over the cooked vegetables and bacon. Stir it well so the flour coats everything evenly. This prevents the sauce from having any flour lumps. Add the fresh thyme and the dried bay leaves now.

4. Deglaze and Simmer

  • Slowly pour the chicken stock into the casserole pot. Scrape the bottom of the pot to release the flavor. Put the browned chicken back into the liquid. Cover the pot with a tight-fitting lid. Let it simmer on low heat for forty minutes.

5. Final Seasoning

  • Remove the lid after the chicken is fully cooked. Check the sauce to see if it is thick enough. Taste the sauce and add more salt if needed. Remove the bay leaves before you serve the meal.
