Measuring Cups

- 1/2 cup POPCORN KERNELS
- 1/2 cup UNSALTED BUTTER
- 1 cup BROWN SUGAR
- 2 tbsp GOLDEN SYRUP
- 1/2 tsp BAKING SODA
- 1/2 tsp SEA SALT
- 1 tsp VANILLA EXTRACT
- 2 tbsp VEGETABLE OIL
Heat the vegetable oil in your large heavy pot. Add the popcorn kernels and cover the pot with lid. Shake the pot until all the kernels have popped.
Remove the popped corn and place it in a bowl. Pick out any unpopped kernels from the white fluffy corn. This ensures every bite is soft and very crunchy.
Melt the butter and brown sugar in a saucepan. Add the golden syrup and stir the mixture slowly. Let it boil for a few minutes until thick.
Turn off the heat and add the baking soda. Stir quickly as the caramel starts to foam up. Add the vanilla and sea salt to the sauce.
Pour the hot caramel over the popcorn in the bowl. Toss it quickly so every piece gets a thin coating. Work fast before the sugar starts to get hard.
Spread the popcorn onto a lined baking sheet now. Let it cool completely until the caramel is very crispy. Break the pieces apart and enjoy your sweet snack!
