- 2 large heads BROCCOLI
- 150 g STILTON CHEESE
- 1 tsp SEA SALT
- 0.5 tsp BLACK PEPPER
- 50 g WALNUTS
- 1.5 liters WATER
Cut the broccoli into small, even florets. Do not throw away the stalks. Peel the stalks and slice them very thinly.
Fill a large pot with water. Add a generous pinch of sea salt. Bring the water to a rolling boil quickly.
Drop the broccoli pieces into the boiling water. Cook them for about five minutes. They should be tender but still very green.
Place your blender jar near the stove. Use a slotted spoon to move the broccoli. Put the hot broccoli into the blender.
Add a small amount of the cooking water. Do not fill the blender to the top. Start blending on a low speed first.
Crumble half of the Stilton cheese into the blender. Season with a bit of black pepper. Blend again until it is very smooth.
Check the thickness of your soup now. Add more cooking water if it is too thick. The soup should pour easily like heavy cream.
