Serving Dishes
- 2 cups WHOLE MILK
- 3 large EGG YOLKS
- 1/2 cup GRANULATED SUGAR
- 2 tbsp CORNSTARCH
- 1 WHOLE VANILLA BEAN
- 3 large RIPE BANANAS
- 1 box VANILLA WAFERS
- 1 cup HEAVY CREAM
Whisk your egg yolks and sugar together. Do this in a medium heat-proof bowl. Beat them until the mixture looks pale.
Add the cornstarch to the egg mixture. Whisk it well to avoid any clumps. This ensures a very smooth pudding texture.
Heat the milk in your large saucepan. Add the vanilla bean seeds to the milk. Bring it to a very gentle simmer.
Slowly pour hot milk into the eggs. Whisk constantly while you pour the milk. This prevents the eggs from scrambling quickly.
Pour everything back into the saucepan. Cook it over medium heat for five minutes. Stir until the pudding becomes very thick.
Remove the pan from the heat immediately. Let the custard cool down for ten minutes. This helps the flavors meld together well.
Slice your bananas into thin, even rounds. Layer them at the bottom of your dishes. Add a layer of vanilla wafers next.
Spoon the warm custard over the layers. Repeat the layers until the dish is full. Top it with freshly whipped heavy cream.
- Use very ripe bananas for the best natural sugar.
- Whisk the custard constantly to keep it silky smooth.
- Chill the pudding for four hours before serving it.
- Squeeze lemon juice on bananas to prevent browning quickly.
- Temper the eggs slowly to avoid a lumpy mess.
- Use a real vanilla bean for the best scent.
