Wire cooling rack
- 4 large RUSSET POTATOES
- 2 tbsp OLIVE OIL
- 1 tbsp SEA SALT
- 1 tsp BLACK PEPPER
- 4 tbsp UNSALTED BUTTER
- 2 tbsp FRESH CHIVES
Wash your potatoes under cold water. Scrub off all the dirt. Pat them very dry with a towel.
Preheat your oven to 400 degrees Fahrenheit. Let the oven get nice and hot. This ensures a crispy skin.
Take a sharp knife. Cut a small cross on top. Do not cut too deep. Just break the skin surface.
Put the potatoes in a bowl. Pour olive oil over them. Rub the oil into the skin well.
Sprinkle plenty of sea salt. Add some black pepper too. Make sure the seasoning sticks.
Place potatoes on the wire rack. Put the rack on the tray. Slide them into the oven center.
Bake for about sixty to seventy minutes. The skin should feel very hard. The inside must be soft.
Remove the tray from the oven. Let them sit for two minutes. This settles the heat.
Push the sides of the potato. Use your thumb and fingers. This makes the cross open up.
Drop a knob of butter inside. Sprinkle your fresh chives on top. Serve them while they are steaming.
- Always dry the potatoes completely before oiling.
- Use Russet potatoes for the fluffiest interior texture.
- Do not wrap the potatoes in aluminum foil.
- Place potatoes on a rack for 360-degree heat.
- Score the skin to let the steam escape.
- Apply the salt right before putting in oven.
- Wait to butter until the very last moment.
- Check softness with a fork or a skewer.
