- 2 lbs ASPARAGUS
- 1 tsp SALT
- 1 bowl ICE
- 2 cups WATER
- 1 tbsp OLIVE OIL
Wash your fresh asparagus under cold water. Trim off the tough and woody bottom ends. Cut the spears into small, even pieces.
Fill a large pot with clean water. Add a big pinch of salt to it. Bring the water to a very fast boil.
Put the asparagus pieces into the boiling water. Cook them for only two or three minutes. They should be tender but still bright green.
Prepare a large bowl with ice and water. Use a slotted spoon to move the asparagus. Put them into the ice bath immediately.
Keep some of the green cooking water. Do not pour all of it away yet. You will need it for the blending.
Place the cold asparagus into your blender. Add a small amount of the cooking water. Blend on high until it is very smooth.
Pour the soup through a fine sieve. This makes the texture very velvety and soft. Push it through with a big spoon.
