Ingredients
  

  • 8 Chicken thighs
  • Cloves garlic (minced)
  • ¼ Jalapeno seeded (minced)
  • 1 cup  Pineapple juice
  • 1 tbsp Canola oil
  • 1 tbsp White vinegar
  • 2 tbsp Lime juice
  • 1/2 tsp Dried oregano
  • 1/4 tsp Ground pepper
  • 1/2 tsp Salt

Instructions
 

  • In a large bowl, mix garlic, jalapeno, pineapple juice, canola oil, white vinegar, lime juice, dried oregano, ground pepper, and salt except for chicken.
  • Save 1/4 cup of marinade and add chicken to the bowl.
  • Cover and marinate for 4 hours in the fridge.
  • Preheat the oven to 425°F and heat a cast iron pan.
  • Place chicken skin side up and bake for 25 minutes.
  • Move pan to stovetop over medium heat.
  • Press chicken with a heavy pan and pour marinade over.
  • Cook for 2-3 minutes, flip, add marinade, and cook again.
  • Remove from heat and serve hot.
