- 8 Chicken thighs
- 2 Cloves garlic (minced)
- ¼ Jalapeno seeded (minced)
- 1 cup Pineapple juice
- 1 tbsp Canola oil
- 1 tbsp White vinegar
- 2 tbsp Lime juice
- 1/2 tsp Dried oregano
- 1/4 tsp Ground pepper
- 1/2 tsp Salt
In a large bowl, mix garlic, jalapeno, pineapple juice, canola oil, white vinegar, lime juice, dried oregano, ground pepper, and salt except for chicken.
Save 1/4 cup of marinade and add chicken to the bowl.
Cover and marinate for 4 hours in the fridge.
Preheat the oven to 425°F and heat a cast iron pan.
Place chicken skin side up and bake for 25 minutes.
Move pan to stovetop over medium heat.
Press chicken with a heavy pan and pour marinade over.
Cook for 2-3 minutes, flip, add marinade, and cook again.
Remove from heat and serve hot.
