  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • Half teaspoon black pepper
  • 1 teaspoon paprika
  • Fresh herbs optional for garnish
  • Lemon juice optional

Instructions

  • Fill a large pot with water.
  • Add a pinch of salt.
  • Bring the water to a boil.
  • Add your peeled carrots to the pot.
  • Boil them for 15 minutes until tender.
  • You should pierce them easily with a fork.
  • Don't overcook them or they'll get mushy.
  • While carrots boil, preheat your oven to 425°F.
  • Line a baking sheet with parchment paper.
  • This prevents sticking and makes cleanup easy.
  • Set it aside until carrots are ready.
  • Drain the boiled carrots well.
  • Place them on your prepared baking sheet.
  • Space them out evenly on the pan.
  • Use a fork or potato masher.
  • Gently press down on each carrot.
  • Smash them until they're about half inch thick.
  • Don't smash them too hard or they'll fall apart.
  • Mix olive oil with minced garlic.
  • Add salt, pepper, and paprika to the mixture.
  • Brush this mixture over each smashed carrot.
  • Make sure to coat them well.
  • The oil helps them get crispy and golden.
  • Put the baking sheet in your preheated oven.
  • Roast for 20 to 25 minutes.
  • Flip them halfway through cooking time.
  • They should be golden brown and crispy.
  • The edges will get extra crunchy.
  • That's when they're perfect!
  • Remove from oven when they're golden.
  • Squeeze fresh lemon juice over them if you like.
  • Sprinkle with fresh herbs like parsley.
  • Serve them immediately while they're still hot.
  • They taste best when they're crispy!

Notes

  • Don't skip the boiling step first.
  • This makes carrots tender inside.
  • Use medium-sized carrots for best results.
  • Small ones are too hard to smash.
  • Large ones take too long to cook.
  • Make sure your oven is really hot.
  • High heat creates that crispy texture.
  • Don't crowd the baking sheet too much.
  • Leave space between each carrot.
  • This helps them crisp up nicely.
  • You can add different spices too.
  • Try cumin, chili powder, or herbs.
  • Garlic powder works if you don't have fresh garlic.
  • Brush oil generously for maximum crispiness.
