Fill a large pot with water.
Add a pinch of salt.
Bring the water to a boil.
Add your peeled carrots to the pot.
Boil them for 15 minutes until tender.
You should pierce them easily with a fork.
Don't overcook them or they'll get mushy.
While carrots boil, preheat your oven to 425°F.
Line a baking sheet with parchment paper.
This prevents sticking and makes cleanup easy.
Set it aside until carrots are ready.
Drain the boiled carrots well.
Place them on your prepared baking sheet.
Space them out evenly on the pan.
Use a fork or potato masher.
Gently press down on each carrot.
Smash them until they're about half inch thick.
Don't smash them too hard or they'll fall apart.
Mix olive oil with minced garlic.
Add salt, pepper, and paprika to the mixture.
Brush this mixture over each smashed carrot.
Make sure to coat them well.
The oil helps them get crispy and golden.
Put the baking sheet in your preheated oven.
Roast for 20 to 25 minutes.
Flip them halfway through cooking time.
They should be golden brown and crispy.
The edges will get extra crunchy.
That's when they're perfect!
Remove from oven when they're golden.
Squeeze fresh lemon juice over them if you like.
Sprinkle with fresh herbs like parsley.
Serve them immediately while they're still hot.
They taste best when they're crispy!
