Ingredients
  

  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 chopped onion
  • 2 chopped carrots
  • 2 chopped celery sticks
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 2 cups water
  • 1 cup milk or cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions
 

  • Rinse the rice well.
  • Boil it in water until soft.
  • This takes about 30–40 minutes.
  • Heat olive oil in a large pot.
  • Add onions, carrots, and celery.
  • Stir until soft and golden.
  • Add minced garlic and thyme.
  • Stir for one minute until fragrant.
  • Add the cooked rice, broth, and water.
  • Mix well. Simmer for 15 minutes.
  • Add milk or cream slowly.
  • Stir until the soup is thick and creamy.
  • Taste and add salt or pepper.

Notes

  • Use fresh vegetables for more flavor.
  • Don’t rush cooking the rice. Slow cooking gives a nice texture.
