Ingredients
  

  • 1 pound of penne or rigatoni pasta.
  • 1 pound of boneless chicken breast cut small.
  • 1/2 cup of unsalted butter melted slowly.
  • 2 tablespoons of Dijon mustard for the tang.
  • 1 tablespoon of fresh lemon juice squeezed.
  • 4 cloves of garlic minced very finely today.
  • 1/4 cup of fresh parsley chopped small.
  • 1 teaspoon of smoked paprika for the color.
  • 1/2 teaspoon of red pepper flakes for heat.
  • 1/2 teaspoon of kosher salt to season well.

Instructions
 

Boil the Pasta Noodles

  • Fill a large pot with water and some salt. Boil the pasta until it is soft and tender.

Season the Chicken Pieces

  • Rub the salt and paprika onto the chicken meat. Make sure every piece has a nice red coat now.

Sear the Spiced Chicken

  • Heat a skillet over medium heat with a little oil. Cook the chicken until it is golden brown and juicy.

Melt the Cowboy Butter

  • In a small bowl, mix the melted butter and mustard. Add the lemon juice and the minced garlic now.

Stir in the Fresh Herbs

  • Add the chopped parsley and red pepper flakes to the butter. Whisk until the sauce is very colorful.

Combine Chicken and Butter

  • Pour the spicy butter sauce over the cooked chicken in the skillet. Toss well for one minute today.

Toss with the Cooked Pasta

  • Add the drained noodles to the buttery chicken mixture. Stir everything until the pasta is fully coated.

Serve with Extra Garnish

  • Place the hot pasta into large serving bowls. Sprinkle with extra parsley and a little more lemon juice.

Notes

  • Use fresh garlic instead of the jarred version.
  • Do not burn the butter while melting it today.
  • Add a splash of pasta water for a smooth sauce.
  • Use a thick noodle to hold the heavy butter.
  • Adjust the pepper flakes if you like it very spicy.
  • Serve right away while the butter is very hot.
  • Add extra lemon if you want more zesty flavor.
