Preheat your oven to 400°F (200°C).
Line your baking sheet with parchment paper.
Take the puff pastry out to thaw.
This takes about 15 minutes at room temperature.
Combine cream cheese in your bowl.
Add the shredded cheddar cheese.
Mix in the diced ham pieces.
Add your dried herbs.
Season with salt and pepper.
Stir everything together until well combined.
Roll out one pastry sheet on your board.
Keep it in a rectangle shape.
Spread half the filling on the pastry.
Leave a small border around edges.
Place the second pastry sheet on top.
Press edges gently to seal.
Cut the pastry into triangle shapes.
Make them look like Christmas trees.
Use your knife carefully.
You should get about 8-10 trees. Make small cuts on the sides.
This creates branch-like details.
Beat the egg in a small bowl. Brush it over each tree.
Sprinkle sesame seeds on top.
Place trees on your baking sheet.
Leave space between each one.
Put the sheet in your preheated oven.
Bake for 15-20 minutes.
Watch them turn golden brown.
The cheese inside will melt beautifully.
Remove when they're crispy and golden.
