Ingredients
  

  • 1 lb Crawfish Tails
  • 12 Corn Tortillas
  • 2 cups Pepper Jack Cheese
  • 1 cup Heavy Cream
  • 2 tbsp Cajun Seasoning
  • 1 tbsp Butter
  • 1 medium Onion
  • 1 large Bell Pepper
  • 3 cloves Garlic

Instructions
 

1. Sauté the Vegetables

  • First, melt your butter in the large skillet. Add the diced onions and bell peppers. Cook them until they are soft and clear. Add the garlic and cook for one minute. Do not let the garlic burn at all.

2. Prepare the Crawfish Filling

  • Add the crawfish tails to your hot skillet. Sprinkle the Cajun seasoning over the meat. Stir it well to coat every single piece. Cook for only three to five minutes. You want the meat warm but not tough.

3. Make the Creamy Sauce

  • In your saucepan, mix cream and more seasoning. Let it simmer until it gets slightly thick. Stir in a handful of cheese until smooth. This sauce will keep the dish very moist. It ties all the flavors together perfectly.

4. Roll the Enchiladas

  • Dip a tortilla into the warm cream sauce. Place a scoop of crawfish in the center. Add a little cheese inside the tortilla too. Roll it up tightly and place in dish. Repeat this until the baking dish is full.

5. Add Toppings and Bake

  • Pour the remaining sauce over the rolled tortillas. Sprinkle the rest of the cheese on top. Put the dish into a hot oven. Bake until the cheese is bubbly and brown. This usually takes about twenty minutes total.
