- 2 lbs Whole chicken (cut into pieces)
- 1 cup Buttermilk
- 1 cup All-purpose flourÂ
- 1 tsp Onion powder
- 1/4 tsp Baking powder
- 1 tsp Paprika
- 1/4 tsp Cayenne pepper
- 1 tsp Black pepper
- 1 tsp Garlic powder
- 2 tsp Salt
- vegetable oil (for frying)
Wash and dry the chicken.
Cut chicken into pieces.
Place chicken in a bowl.
Mix flour, salt, pepper, and spices.
Add baking powder to the mixture.
Coat chicken with buttermilk.
Refrigerate for 40 minutes.
Let the chicken sit at room temperature.
Heat oil to 350°F.
Remove chicken from buttermilk, and drip off excess.
Coat chicken in flour mixture.
Place on a wire rack.
Fry in batches, don’t overcrowd.
