Ingredients
  

  • 2 tablespoons olive oil
  • 1 big yellow onion chopped
  • 4 garlic cloves chopped
  • 1 ½ pounds ground turkey
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • 2 cans 14.5 oz each white beans, rinsed
  • 1 can 28 oz diced tomatoes
  • 2 cups chicken broth
  • Sour cream for topping
  • Shredded cheddar cheese optional
  • Fresh cilantro optional

Instructions
 

  • Heat oil in a big pot on medium heat
  • Add onion and cook until soft (about 5 minutes)
  • Add garlic and stir for 1 minute
  • Add turkey and break it into pieces
  • Cook until turkey is no longer pink
  • Add salt, pepper, cumin, and chili powder
  • Stir in oregano and red pepper flakes
  • Mix everything together
  • Add beans, tomatoes, and chicken broth
  • Bring to a boil, then turn the heat down
  • Let it cook for 30 minutes without a lid
  • Stir sometimes so it doesn’t stick
  • Taste and add more salt if needed
  • Spoon into bowls and add toppings
  • Enjoy it hot with your favorite side

Notes

  1. Use fire-roasted tomatoes for a smoky flavor
  2. Rinse the beans to remove extra salt
  3. Let it cook longer for richer taste
  4. Add a little cinnamon for warmth
  5. Use ground chicken if you don’t have turkey
