Preheat your oven to 375°F.
This ensures even baking.
Spray your muffin tin with cooking spray.
This prevents sticking later.
Roll out the thawed puff pastry.
Cut it into 24 small squares.
Each square should fit your muffin cup.
Press each square gently into the cups.
Make sure they cover the bottom completely.
Cut your brie into small cubes.
Place one cube in each pastry cup.
Don't overfill them. The cheese will melt and spread.
Add a small spoonful of cranberry sauce.
Put it right on top of the brie.
About half a teaspoon works perfectly.
Add chopped pecans if you like crunch.
Put the muffin tin in the oven.
Bake for 15-18 minutes.
Watch them carefully near the end.
The pastry should turn golden brown.
The cheese will bubble and melt beautifully.
Remove from the oven carefully.
Let them cool for 2-3 minutes.
Drizzle honey on top if desired.
Add a small rosemary sprig for decoration.
Serve them while they're still warm.
