Bacon Cheddar Gnocchi Soup Recipe

Ingredients
  

  • 8 slices of bacon chopped
  • 1 pound fresh or frozen gnocchi
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 2 cups shredded cheddar cheese
  • 1 small onion diced
  • 3 garlic cloves minced
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions
 

  • Place bacon in your large pot.
  • Cook over medium heat until crispy.
  • This takes about 8 minutes.
  • Remove bacon and set aside.
  • Leave 2 tablespoons of bacon grease.
  • Add diced onion to the bacon grease.
  • Cook for 5 minutes until soft.
  • Add minced garlic and cook 1 minute.
  • Stir frequently to prevent burning.
  • Pour in chicken broth and heavy cream.
  • Bring the mixture to a gentle boil.
  • Add gnocchi and reduce heat to simmer.
  • Cook for 5 minutes until gnocchi floats.
  • Stir in shredded cheddar cheese slowly.
  • Keep stirring until cheese melts completely.
  • Add fresh spinach and stir until wilted.
  • Season with salt and pepper.
  • Add cooked bacon back to soup.
  • Save some bacon for topping.
  • Let soup simmer for 2 more minutes.
  • Serve hot with extra cheese on top.

Notes

  • Don't boil the soup too hard.
  • High heat can make cream separate.
  • Use good quality cheddar for best flavor.
  • Sharp cheddar gives extra taste.
