Ingredients

  • 1/2 cup of old-fashioned rolled oats do not use instant oats.
  • 1/2 cup of unsweetened almond milk or milk of choice.
  • 1/4 cup of Greek yogurt plain or vanilla.
  • 1/2 small apple finely diced (Granny Smith or Honeycrisp).
  • 1 tablespoon of chia seeds for thickness.
  • 1 tablespoon of pure maple syrup or honey.
  • 1/2 teaspoon of ground cinnamon.
  • 1/4 teaspoon of vanilla extract.
  • A pinch of salt.

Instructions

Prep the Jar

  • Choose a clean glass jar or a small bowl that has a tight-sealing lid to prevent any odors from the fridge getting in.

Add the Base

  • Pour the rolled oats and the chia seeds into the jar. Use a spoon to give them a quick stir.

Spice it Up

  • Add the cinnamon, a pinch of salt, and the vanilla extract. These provide the "pie" flavor profile.

Pour the Liquids

  • Stir in the almond milk, Greek yogurt, and maple syrup. Mix well until all the oats are fully submerged.

Fold in Fruit

  • Add the finely diced apples. Stir them gently into the oat mixture so they are distributed evenly.

Seal and Shake

  • Put the lid on the jar and give it a good shake. This ensures the chia seeds don't clump at the bottom.

Chill Overnight

  • Place the jar in the refrigerator for at least 6 hours, though overnight (8 hours) is the best for a creamy texture.

Garnish and Serve

  • In the morning, give the oats a quick stir. Top with a few extra apple slices or a sprinkle of toasted walnuts before eating.

Notes

  • Use Rolled Oats. Steel-cut oats stay too crunchy, and instant oats get too mushy; rolled oats provide the perfect "al dente" bite.
  • Don't skip Chia. These tiny seeds absorb 10 times their weight in liquid, which is the secret to getting a thick, custard-like consistency.
  • Sauté the apples. If you prefer soft apples like in a real pie, sauté the diced apples with a little cinnamon and water for 2 minutes before adding to the jar.
  • Adjust the liquid. If you like your oats thinner, add an extra splash of milk in the morning. If you like them thicker, use a bit more yogurt.
  • Keep it fresh. This recipe stays good in the fridge for up to three days, so you can prep a few jars at once on Sunday night.
  • Add a crunch. Wait until the morning to add nuts or granola so they stay crispy instead of getting soft in the liquid.
